Palmento Costanzo is a state-of-the-art cellar located in the Contrada Santo Spirito area of Passopisciaro. Palmento Costanzo uses different vessels, including stainless steel, cement and wood to obtain the level of oxidation required by its various expressions. Vines range from 30 to 100 years in age and are planted at 700 to 750 meters above sea level. Palmento is the name of ancient wineries with stone-carved fermentation tanks and all-wood presses. These old wineries represent an important part of Sicily’s prolific past. The palmentos are buildings of enormous beauty and at Palmento Costanzo the stone vats were refitted with made-to-measure stainless steel coating and gravity-flow processing. Yet, the architectural authenticity (including low ceilings and overhead wood beams that must be a challenge) has been left superbly intact. The enormous effort to restore this palmento pulls at the heartstrings of anyone who loves wine.
